Getting rid of rice is the most challenging thing for us. Its like breaking up with a 30 year old boyfriend just because research convinced us he’s not good for you and he will kill you down the road. Sorry that is just too extreme but rice, although full of carbs, used to be a staple at our house since the time I can remember. Its the most important part of meal at any South Asian household other than roti or naan bread.
Anyways now that we have been free of rice for about 3 months we decided to find healthier substitutes. Yesterday shopping at Trader Joe’s I came across the broccoli rice which seemed so fresh you had to buy it. Other option was cauliflower rice. I feel sick even mentioning it. I don’t do cauliflower well. Its just something I stay away from. People tried to convince me but no NO cauliflower is not a substitute for anything. Maybe if you like to eat soap or any kind of cleaners or kale you can certainly try it. (Heartfelt apologies to all the cauliflower lovers out there)
So we got the broccoli rice which by the way, you can easily make at home by grinding broccoli or chopping it very finely. But hey, I was at Trader Joe’s and I had to get something exciting. (Yes my life is sad I find broccoli rice exciting). I sauteed them and cooked them exactly like I used to cook my Chinese fried rice and the result was awesome. Best part I got some broccoli in my toddlers tummy for the first time! Yes I love these now and I love Trader Joe’s.
1/2 packet broccoli rice
Salt and pepper to taste
Two eggs scarambled with a bit of water
1/4 small onion finely chopped
1 tbsp Worcestershire sauce (zero carbs)
1/4 tsp garlic
1 tbsp butter
- Sauté onion in butter
- When they turn translucent add garlic.
- Stir for a bit and add the broccoli rice and keep sautéing
- Season it with salt and pepper. Add Worcestershire sauce. Keep stirring for five minutes.
- Mix the scrambled eggs and serve with your favorite gravy. I served it with my Pepper chicken and everyone devoured it.
