Easy Keto Egg Muffins

This was the first thing I prepared for our Keto journey. Omg! this is incredibly easy and delicious and my husband loves it.

Also my two year old took 10 minutes to gobble it all up. This has certainly been the highlight of my day.


12 large eggs beaten with salt, red chilli pepper and cumin as per taste

2-3 sausages or left over meat

24 slices mushrooms

24 leaves spinach

1/4 cup chopped tomatoes (optional)

1/4 cup chopped onion (optional)

1/8 cup sliced Serrano pepper

1/4 cup mozzarella cheese or any shredded cheese of your choice


  1. Preheat oven to 350 F and line a muffin pan with cupcake liners or just grease it with butter or ghee.
  2. Add 2-3 pieces of sausages, mushrooms, spinach, tomatoes, Serrano pepper and onion and cheese in each cup.
  3. Pour in 1/4 cup of the beaten egg mixture.
  4. Bake for 20 – 25 minutes. Check if its done and Enjoy!

Tip: You can cling wrap them individually andΒ  keep them in the refrigerator for up to a week and in the freezer for 3 months. (It never lasts that long πŸ™‚ Just reheat in the microwave for 30 seconds and they’re ready and delicious as ever!
