Palak Paneer Recipe (Spinach with Cheese)

Who really likes spinach? I love all the healthy properties of spinach and the beautiful green color it provides to any dish but girl, you need to be really creative with this for it to actually taste yummy.

I love spinach in smoothies and love to add them in my other dishes so that my husband and my two year old get some of this magical vegetable. However, the dish I will be sharing with you today is exclusively about spinach and oh its so good! Its basically from my home country Pakistan and I learned this particular recipe is a mixture of my moms and a lot of other recipes. I basically changed it according to what I like and I encourage you to play around with it. This is how we love it!

Ingredients

3 packets of fresh express baby spinach (again you can use any kind, or any quantity)

1 block of desi paneer cut in small blocks (I used the swad brand that you can get from any pakistani or indian store but you can also substitute it with Ricotta cheese)

2 tomatoes

1/2 onion

2 green chillies / serrano pepper medium (add according to your spice level)

2 tsp garlic paste

2 tsp ginger paste

3/4 tsp cumin powder

3/4 tsp red chilli flakes

3/4 tsp coriander powder

1 tsp salt or according to taste

1/2 tsp turmeric powder

1/2 cup heavy whipping cream

2 tbsp or more Butter for frying onions and cheese

Directions

  1. Cut the tomatoes in four and heat them on high in the microwave for two minutes. We need to puree the tomatoes and this makes it easier. Take them out remove the skin and just mash them with a fork or hand blender.
  2. Add 1/4 cup of water in a pot on stove with very low heat and add all the spinach. Once the spinach starts wilting it will come down and you can close the lid.
  3. In a separate pan fry onions in a bit of butter till it turns translucent.
  4. Add tomatoes, ginger garlic paste, and all the spices in the onion. and fry for a couple of minutes.
  5. Take out the wilted Spinach after 5 minutes and let it cool (or not, depends on the blender. I use the ninja blender and it blends hot stuff easily). Put it in the blender along with the onion and tomato mixture and the green chillies. Blend till everything is in a paste form. Aah! I love the bright green color.
  6. Put this paste back in your pot on low heat and cover immediately as it will splutter a lot. I use this splatter screen and it saves my stove and my kitchen. Cook for about 4 minutes. Check spices and salt and adjust.
  7. Add the heavy whipping cream and take it out in the serving dish.
  8. Melt a tbsp of butter in a frying pan and fry the cheese for two or three minutes. I fry till the cheese turns golden. For ricotta you don’t need to fry that much as it is already soft. You can put it without frying too but I love the taste of the butter and fried cheese.
  9. Add the cheese to the spinach and serve!

Tip: You can eat it with almond flour tortillas or like my husband and daughter who both love it with just a spoon.
