Ratatouille Recipe

I was kinda forced by my two year daughter to make this recipe because she saw a mouse make it on tv. Of course if a mouse can make something sound so delicious it must be yummy.

Basically my daughter trusts that mouse more than her mommy.

So we tried it and surprisingly it turned out well! Turned out to be a perfect keto snack at our house.

Ingredients

1 bell pepper chopped

1 egg plant chopped

1 zucchini chopped

1 tsp garlic paste

Salt and pepper to taste

4 tsp dried thyme

1/4 tsp dried rosemary

A pinch of fennel seeds

1/2 tsp paprika (optional)

Directions

1) Mix everything.

2) Airfry for 15 minutes at 350 F. Or bake at 400 F for 12 minutes turning once.

3) Garnish with fresh basil.
